*you can get great results using a kit and then adding your own flavours in the secondary bottle ferment.    
Used real vanilla pods.

Bert's R.I.P.A. - All done from scratch. Officially more of a golden ale than an IPA. Added ginger to last 15mins of boil. Dedicated to memory of Bert Jansch.

Carnivale Brettanomyces (Brett Will Eat Everything)

A festival dedicated to the funkier side of beer launched today at Oedipus Brewing in Amsterdam.  I caught up with Jan from De Bierkoning bottleshop to talk about his love for these organisms with funny names like Brettanomyces, Lactobacillus, Pediococcus, Acetobactor, Torulaspora, Kluyveromyes and Debaryomyces.  Ya dig? Mulled Cider from John Wright (River Cottage)

John Wright from River Cottage posted his Mulled Cider recipe recently... so just sharing this one: To make enough to serve 4, pour 1 litre still cider into a saucepan and add a glass of  good apple juice if you like.  Add 6 cloves and 4 cinnamon sticks, cover and bring slowly  to the boil with the lid in place.  As soon as it starts to simmer turn off the heat and add 200ml sloe gin (optional, but  highly recommended) and 1 or 2 sliced oranges.  Taste, and add a little honey or sugar if  you want.  Serve straight away.
